Whitebait - Curly Tree Whitebait Company - Buying and selling delicious West Coast whitebait since 2009
Whitebait Recipies
  • Don't wash pre cleaned whitebait as this will take away the delicate flavour
  • Drain excess liquid from the whitebait in a sieve.
  • Cook for about 2 mins on each side (patties)
  • Don't  overcook,  whitebait should be moist.
  • Cooked Patties or fritters left in a warming drawer will go soggy. (not as good)
