Whitebait Recipies
 
 Tips:
  • Don't wash pre cleaned whitebait as this will take away the delicate flavour
 
  • Drain excess liquid from the whitebait in a sieve.
 
  • Cook for about 2 mins on each side (patties)
 
  • Don't  overcook,  whitebait should be moist.
 
  • Cooked fritters or patties left in a warming drawer will go soggy. (not good)
 
Basic Whitebait Patties
(Gluten Free)
Curly Tree whitebait patties, West Coast South Is NZ(makes 4 - 5 good ones)
250g Whitebait
1 egg
Butter or oil spray
Salt & pepper
Lemon Juice
 
Beat the egg and mix in the whitebait.
Season with salt and pepper
Heat pan and coat with oil or butter.
Scoop spoonfuls in pan and cook til golden brown approx 2mins on both sides.
Serve on a slice of gluten free bread,  with a squeeze of lemon juice. 
 
 
Sautéed whitebait
 
Whitebait
3 or  4 tablespoons of plain flour
 
2 teaspoons cayenne pepper or any other seasoning
 
Salt n pepper to taste
Oil spray
 
Heat pan
Coat whitebait in flour, cayenne, salt n pepper or just flour if preferred
Place in sieve and shake off excess flour to seperate the bait
Make sure the bait is seperated before cooking
Toss bait for no longer than 30 - 45 seconds.
Garnish, as for other dishes.
 
Variations:
  • Add to a favourite salad.Spice up with cajun seasoning, garlic, herbs.
  • Leave the flour out & just crisp up in pan
